- 2 tablespoons cajun seasoning

- heat the oil in a medium saucepan over high heat add rice and cook stirring for 1 min add tomato paste and cook stirring for 30 seconds or until well coated add 1 1 2 cups water and bring to a simmer cover and reduce heat to low cook for 12 mins or until rice is tender add corn beans and peas and cook covered for 5 mins or until peas are tender stir in coriander
- meanwhile rub steaks with the seasoning heat a barbecue grill or chargrill pan to medium high spray with olive oil spray cook beef for 3 4 mins each side for medium or until cooked to your liking transfer to a plate set aside for 5 mins to rest
- divide rice mixture and steaks among serving plates serve with lime wedges and chutney and sprinkle with extra coriander
