Dijon Lamb


Making a healthy family meal with just six ingredients is easier than you think - the proof is in our roast lamb with veggies.

The ingredient of Dijon Lamb

  • 2 tablespoons dijon mustard
  • 1 tablespoon brown sugar
  • 2 300g trim lamb round roasts
  • 650g about 3 small orange sweet potatoes kumara cut diagonally into 2cm thick pieces
  • 350g green beans trimmed washed
  • 2 tablespoons finely chopped fresh continental parsley

The Instruction of dijon lamb

  • preheat oven to 220u00b0c line a baking tray with non stick baking paper
  • combine the mustard and brown sugar in a small bowl brush the roasts all over with the mixture place on the lined baking tray
  • roast in preheated oven for 25 minutes for medium or until cooked to your liking cover loosely with foil and allow to rest for 5 minutes
  • meanwhile steam the sweet potatoes over a large saucepan of boiling water for 10 minutes add the beans and steam for a further 5 minutes or until the vegetables are just tender toss the parsley through the beans set the beans and potatoes aside and keep warm
  • slice the lamb and divide among serving plates drizzle with any cooking juices and serve with the sweet potatoes and beans
